Professor of History of Science at the University of Alicante, has taught in the degrees of medicine and humanities,nursing and human nutrition and dietetics. At present, he participates as a teacher in the degree of human and dietetic nutrition and in the master's degrees of Development Cooperation and Clinical and Community Nutrition of the University of Alicante,and in the Interuniversity Master of Public Health (Universities of Alicante and Valencia). Between 2007 and 2016 he taught as a visiting professor in the Master's degree in Public Health organized by the National School of Health (Instituto de Salud Carlos III) and the University of Alcalá. He was Director of the Doctoral Program in Public Health (2004-2011) and Balmis Research Group in Community Health and History of Science until October 2012, when he assumed the management of the Department of Community Nursing, Preventive Medicine and Health Public and History of Science at the University of Alicante. Between July 2018 and October 2021 fourteen academic director of the Center de Gastronomia del Mediterrani UA-Dénia (Gasterra). Since November 2017 he is the academic director of the Carmencita Chair of Gastronomic Taste Studies, one of the institutional chairs of the University of Alicante.
