La asignatura es de carácter optativo y se cursa una vez el alumno ha finalizado los estudios correspondientes a la Diplomatura de Nutrición Humana y Dietética. Los aspectos tratados corresponden a cuestiones avanzadas relativas al control de la calidad en general y de la composición química de diversos alimentos.

- Conocer técnicas espectroscópicas de análsis de alimentos

- Conocer las técnicas de cromatografía de fluidos supercríticos y electroforesis capilar

- Conocer la espectrometría de masas

- Concoer electrodos empleados en la industria alimentaria

- Conocer aplicaciones de estas técnicas al análisis de alimentos
