El concepto de transición nutricional hace referencia, básicamente, a los cambios en los patrones sociodemográficos, de alimentación y de estilos y condiciones de vida, que condicionan los estados nutricionales y de salud de las poblaciones. La asignatura analiza los modelos explicativos que ofrecen las teorías transicionales (demográfica, epidemiológica y sanitaria, alimentaria y nutricional y de riesgos medioambientales) y su interés y su utilidad para explicar las dinámicas de salud y, en concreto, el papel que c cabe otorgar a los factores relacionados con la alimentación.
