Conocer los fundamentos de las principales alteraciones que se producen en frutos y hortalizas durante el periodo post-cosecha. Describir algunas de las técnicas de conservación más importantes parta el mantenimiento de los productos hortofrutícolas antes de ser consumidos. Analizar y discutir el concepto de calidad en sus diferentes variantes y estudiar su evolución en función de la manipulación post-cosecha aplicada a los productos.
