Results

Varietal and geographical characterization of almonds based on profiles of their fat fraction,  free amino acids, their mineral composition. Spanish almond discrimination of Californian origin. Monitoring the degree of oxidation of vegetable oils by instrumental techniques (GC, IR, DSC, NMR). Development of new alternative methods for the determination of tocopherol and sitosterol, amygdalin and prunasin, mono and oligosaccharides in foods of plant origin. Determination of quality parameters and characteristic profiles of olive oils in the region. Determination of fatty acid profiles in captive fish. Application of chemometric techniques to the data.
