Course context for academic year 2018-19

The course Mediterranean Diet: Food and Health focuses its study on the role of nutrition in the promotion of health. Numerous epidemiological and experimental nutrition studies show that Mediterranean countries enjoy rates of morbidity due to lower chronic diseases and their life expectancy is higher, which is attributed to the Mediterranean Diet. This subject intends to deepen in the knowledge of the characteristics that make that diet is considered the most healthy, sustainable, satisfactory, safe and social food model.

General Competences

  • CG5 : Obtener conocimientos de arroces y alta cocina mediterránea de otras culturas y costumbres que permitan trabajar en un contexto internacional y en el ámbito de la alta cocina mediterránea.

 

Specific Competences

  • CE3 : Estimar y evaluar la relación entre el binomio dieta mediterránea y salud.
  • CE5 : Desarrollar habilidades de aprendizaje necesarias para emprender estudios posteriores en arroces y alta cocina mediterránea con un alto grado de autonomía.

Describe the advanced scientific evidence that endorses the healthy effect of the Mediterranean Diet.
Define from an advanced nutritional point of view the different foods that are part of the Mediterranean Diet and the instruments to evaluate the adherence of the population to this food pattern.
Analyze the relationship of Mediterranean diet with the health and prevention of chronic diseases.
Plan a dietary menu based on the pattern of the Mediterranean Diet
